Carrots

Nutritional Tips: Carrots are rich in vitamin A and beta-carotene, while carrot greens also provide vitamins A, C, and K. These vitamins improve eye sight, immune function, and regulate blood pressure.

How to Store:

First separate the greens from the carrots and store them separately. The greens, if left on, will draw moisture from the carrots causing them to wilt.

Carrot greens can be stored in a resealable bag with a damp paper towel for a few days. Or you can place them in a freezer to use in soup stock later.

Carrots can be stored in the refrigerator, ideally in a crisper drawer, in an airtight container lined with a dry paper towel to absorb excess moisture.
